Split Pea, Ham and Vegetable Soup

A hearty soup suitable for lunch or dinner.

Serves 8-10

1 tbsp olive oil

1 onion, diced

3 celery stalks, diced

3L water

4 stock cubes (chicken or vegetable)

1kg split peas

½ tsp oregano

½ tsp garlic powder

1 small bay leaf

2 cups cooked leg ham, cubed or shredded

2 carrots, diced

Cracked pepper to taste


  1. Heat oil in a large saucepan and sauté onion and celery until soft.
  2. Add water, stock cubes, split peas, oregano, garlic powder, bay leaf and ham. Bring to the boil and then reduce to a simmer over a low heat for 90 minutes, stirring regularly.
  3. Once soup has thickened, remove bay leaf and add carrots. Simmer for another 30-60 minutes, or until carrots are tender. Season with pepper to taste.

Cook time: 150 minutes
